Salmon tartare with cucumber

Ingredients
– 1 cucumber
– 400 grams of fresh salmon (smoked / combination of both)
– 1 lemon
– 25 grams of fresh chives
– 50 milliliters of olive oil
– A pinch of pepper and salt

Preparation method
Cut the salmon and the cucumber into cubes of about half a centimeter. Note: discard the cucumber from the seeds. Put the salmon and cucumber in a bowl and season to taste with a pinch of salt and pepper. Meanwhile, grate the lemon zest with a grater and add some grater and 2 tablespoons of the lemon juice to the salmon and the cucumber. Keep a few sprigs of the chives and chop roughly half of them and scoop them with the salmon. Then put 1/4 of the salmon mixture in a cooking ring and press it with a spoon. Carefully remove the ring. Then chop the other half of the chives as finely as possible and mix them with the olive oil. Drizzle the salmon tartar and around this tartar with the chives- olive oil mixture. To finish, put a few sprigs of chives on the tartare.
