Vegetarian pea soup
Ingredients for 2 persons – 2 liters of water – 300 grams of split peas – 1 tablespoon of salt – 5 sprigs of parsley – 50 grams of butter – 1/4 celeriac – 1 leek – Half winter carrot – Half fennel tuber – 3 sprigs of rosemary – 2 teaspoons of sambal oelek – 1 onion |

Preparation method
1. Fill the soup pot with 2 liters of water, the split peas and the salt and bring it to a boil.
2. Scoop the foam from the water.
3. Add the parsley and let it cook through.
4. Cut the onion into small cubes and finely chop the rosemary.
5. Smother all vegetables, the onion and rosemary in the butter in a wok or frying pan with a lid on a low heat.
6. Stir occasionally in the peas and the smothering vegetables. When the peas start to fall apart and the vegetables are smothered, add the vegetables to the pea soup.
7. Cook for another hour on a low heat and add a little sambal.
