Salad with orange and feta
Ingredients for 3/4 persons – 100 grams of feta – 1/2 teaspoon of dried mint – black pepper – 2 tablespoons of shaved almonds – 60 grams of pomegranate seeds – 1 orange – 1/3 cucumber – 1 small head of Roman lettuce |

Preperation method
1. Remove about 8 nice leaves of lettuce from the crop.
2. Cut off the top and bottom tips of the orange.
3. Cut the skin and the white skin from top to bottom.
4. Hold the orange over a bowl and cut out the parts with the knife along the inner membranes.
5. Collect the juice of the orange in a bowl and mix it with the mint and pepper.
6. Halve the orange slices and cut the cucumber and feta into cubes.
7. Mix the orange wedges, cucumber and feta cubes with the pomegranate seeds and add the orange juice dressing.
8. Roast the shaved almonds briefly in a pan.
9. Scoop the mixture into the lettuce leaves and sprinkle with the shaved almonds.
This fresh salad is delicious for the meal, but also very suitable for the first week after a Health Holiday! Enjoy your meal!
