Orange soup

A dish that everyone in the Netherlands will enjoy: orange soup. A healthy soup consisting of pumpkin, carrot and lentils.

Ingredients

  • Half a pumpkin
  • 250 grams carrots
  • 125 grams of red lentils
  • 3 cm grated ginger
  • 2 stock cubes
  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon olive oil
  • 200 ml Greek yogurt
  • Coriander

Preparation

Cut the pumpkin into quarters and remove the seeds and ribs. Cut half into cubes. Also chop the carrots into pieces. Boil 1250 ml of water and add the lentils, pumpkin, carrot, stock cubes and ginger root. Cook for 15 minutes until everything is soft. Meanwhile, chop the onion and garlic and fry them in a small dash of oil until light brown. Puree the soup and then add the onion, garlic and olive oil and stir well. Heat gently over low heat. Ladle the soup into plates or bowls and add a tablespoon of yogurt and garnish with coriander. This soup is also delicious with naan bread.
