Healthier pancakes with mango and coconut
Ingredients for 2 persons – 1 ripe banana – 2 eggs – 3 tsp spelled flour – 1 tbsp baking powder – 1 ripe mango – 1 hand of coconut flakes – salt |

Preparation method
Punch the banana and beat the eggs. Mix the banana with the beaten eggs, a pinch of salt, the spelled flour and the baking powder and mix into a smooth batter. Heat a dash of oil in a frying pan. Spoon three heaps of batter into the pan and fry the pancakes on both sides until golden brown in about 3 minutes. Repeat with the rest of the batter. Peel the mango and cut it into coarse pieces. Puree the mango in a food processor to a smooth sauce. Put a stack of 3-4 pancakes on each plate and finish with the mango puree and the coconut flakes.
