Courgetthi carbonara
Ingredients for 2 persons – 4 zucchinis – 1 tbsp coconut oil – 150 gr smoked bacon – 250 gr mushrooms – 4 cloves of garlic, cut – 1 avocado – 1 tbsp leaf parsley, finely chopped – 1 shallot, finely chopped – 1 teaspoon of white wine vinegar – 2 eggs – Celtic sea salt and freshly ground pepper, to taste |

Preperation method
Make spaghetti strings from the zucchini. Melt the coconut oil in a frying pan over medium heat and fry the bacon. Then add the mushrooms and fry them. Finally, bake the courgetthi briefly until they are soft. Puree the garlic, avocado, leaf parsley, shallot, white wine vinegar and eggs to an even mass. Stir it now through the courgetthi and warm it for a while.
