Cauliflower rice with spinach and bacon

Ingredients
– 400 gr of cauliflower rice (self-ground or ready)
– 200 gr bacon (or healthier: 200 gr smoked chicken strips)
– 125 gr mushrooms in slices
– 75 gr goat cheese (or healthier: no cheese at all)
– 100 gr of fresh spinach
– sniff thyme
– sniff black pepper
– 2 tablespoons of pecans

Preparation method
Fry the bacon in a pan without oil or butter. Pour the fat and moisture out of the pan before you continue cooking. Cut the uncooked cauliflower into florets and finely grind them into rice in a food processor. Add the cauliflower rice to the pan with the bacon and season with a pinch of thyme and some black pepper. Bake for 2 minutes and then add the mushrooms through it. As soon as the mushrooms start to shrink, add the spinach and fry it for a while. Spoon the dish on a plate or in a bowl and crumble some goat cheese and pecans over it.
