Avocado Quinoa salad
Ingredients for 4 persons – 180 gr quinoa, uncooked – 235 ml of water – 1 tablespoon of olive oil – 1/2 lemon, grated peel and squeezed – 1/2 avocado cut into pieces – shaved almonds, roasted – fresh parsley, chopped – sea salt |

Preparation method
1. Rinse the quinoa in a colander (to avoid the bitter taste)
2. Bring the pan to 235 ml water and add the quinoa. Put the lid on the pan and simmer for 20 minutes until the water has been absorbed. Stir in the olive oil, lemon juice and the grated lemon.
3. Finally, carefully pour in the pieces of avocado and sprinkle with sea salt. You can also add some roasted almonds or a bit of parsley.
