Frisee salad with figs
Ingredients for 4 persons – 3 tablespoons finely chopped shallot – 2.5 tablespoons of sherry vinegar – 5 tablespoons of olive oil – 1 pop of frisee salad – 225 grams medium to large pieces of roast chicken – 8 fresh figs – freshly ground black pepper and grotto sea salt – 40 grams of chopped smoked almonds |

Preperation method
1. Make the leaves of the frisee salad smaller.
2. Remove the stalks from the figs and cut them into quarters.
3. Put the shallot, vinegar and half a teaspoon of salt together in a large bowl and let stand for 15 minutes.
4. Then add the oil with a uniform stream. Keep stirring constantly.
5. Add the fresh salad, the chicken and a pinch of salt to the dressing and mix. Present this on the signs.
6. Then put the figs in the dressing bowl and add a good pinch of salt and pepper. Then put the figs on the salad and sprinkle with the almonds.
A fig is completely full of fiber!
