Mushroom ratatouille
Ingredients – 2 tablespoons of olive oil – 1 teaspoon of dried thyme – 1 teaspoon of dried oregano – 1 red onion, chopped finely – 500 grams of mushrooms, cut into thin slices – 1 ripe meat tomato, skinned and chopped – Sea salt – freshly ground pepper |

Preparation method
1. Put the olive oil, herbs and chopped onion in a frying pan and let the onion and herbs gently fry for 2 to 3 minutes.
2. Add the mushrooms and fry them for 3 to 4 minutes, until the moisture starts to run out.
3. Stir the sliced tomatoes and salt and pepper to taste with the mushroom mixture.
4. Now you can serve the ratatouille, both hot and cold.
You can mix this ratatouille with a salad, spread it on a cracker or in small quantities on slices of cucumber and serve as a snack. Enjoy your meal!
