Tuna with white beans
Ingredients for 2 persons – A half finely chopped red onion – 2 tablespoons of white wine vinegar – 1 tablespoon of caster sugar – 400 grams of canned white beans, rinsed and drained – 2 tablespoons of finely chopped parsley – 225 grams of white tuna – A shell of half a lemon – 1 clove of crushed garlic – 2 tablespoons of olive oil – 1 teaspoon of Dijon mustard – Sea salt and freshly ground pepper |

Preperation method
1. Put the chopped onion in a bowl and add boiling water so that they are just under water. Let stand for five minutes and then drain. Stir in the white wine vinegar and sugar. Leave it for another five minutes.
2. Put the white beans, parsley and tuna in a large bowl.
3. Strain the vinegar and sugar out and stir in the lemon zest, garlic, oil and mustard.
4. Pour the onion dressing over the beans and mix carefully with the pieces of tuna. Garnish with mustard, pepper and salt.
Beans are dried seeds that are full of powerful nutrients!
