An easy recipe with a whole bowl of vegetables in the main role
Ingredients for 2 persons For the vegetable dish – 3 garlic cloves – 2 red onions – 1 courgette – 1/2 eggplant – 1 orange pepper – olive oil – salt – pepper – some dried oregano – fresh thyme – fresh rosemary For the baked salmon – 1 salmon – salt – pepper – buckwheat flour |

Preparation method
1. Finely chop 3 garlic cloves and cut 2 red onions. Wash 1 zucchini, half an eggplant and 1 orange pepper.
2. Cut the zucchini into pieces and do the same with the half eggplant and the peppers.
3. Grease a large oven dish with some olive oil and arrange the vegetables with the onion in the dish.
4. Divide the garlic over the vegetables. Sprinkle some salt and pepper and some dried oregano.
5. Also divide some fresh herbs over the vegetables (eg thyme and rosemary) and sprinkle a little olive oil over it.
6. Place the dish in the oven at 175 degrees for 45 minutes. The tomatoes then open and are delicious.
This is how you make the baked salmon
Get the salmon with skin 30 minutes before you prepare it from the cooling. Then the salmon comes to temperature. Sprinkle some salt, pepper and some buckwheat flour on the side with skin (not the skin side). Fry the salmon on the skin side in some olive oil for 4 minutes on a low heat and turn the fish over for another 3 minutes.
